1. Muddle fresh ingredients
Don’t just chop or throw them in whole
2. Add 3 cups of warm-hot water
Set your kettle at 160°F to get things moving
3. Steep for 45 minutes
No less than 30 (too weak), no more than 60 (too bitter)
4. Strain and remove solids
Rinds and stems hold the most bitterness
5. Pour over ice and stir
